The Chef’s Table Africa continues to redefine fine dining in Kampala, most recently with an event that fostered a warm, communal atmosphere where strangers quickly became friends. This edition featured Nairobi-based Chef Marcelino Dgedge, whose approach focused on ingredient-driven cooking and storytelling, making the experience feel more like an intimate dinner party than a formal performance.
Chef Dgedge emphasized using humble, locally sourced ingredients after exploring Kampala’s markets. His philosophy of restraint was evident in dishes like a beef and peanut curry with sweet potato, and a delicately steamed fish wrapped in banana leaf. “The quality of vegetables here amazed me. So I wanted to focus on humble ingredients instead of luxury ingredients,” he shared with attendees.
A notable aspect of the evening was the deliberate and sophisticated cocktail pairings, expertly crafted by bartender Preston Okot. Unlike typical dining where drinks play a supporting role, these cocktails were designed to be integral to the tasting experience, enhancing the flavors of each course. Okot explained that the pairings, particularly those featuring Singleton 12, were chosen for their ability to complement rather than overpower the food, especially desserts.
The event drew a diverse crowd, reflecting the inclusive spirit of The Chef’s Table Africa. Guests from various professional backgrounds mingled and shared conversations, creating a lively and engaging environment. Chef Dgedge himself was present throughout the night, engaging with diners and explaining the inspiration behind his menu, which he described as a culinary journey through his experiences in different parts of Africa and Italy.
The dessert, a Mozambican-inspired cassava pudding, provided a sweet conclusion, layering coconut flavors with cinnamon and vanilla. By this point, the initial analysis of flavors had given way to a shared enjoyment, underscoring the event’s success in creating genuine connection through food. The Chef’s Table Africa demonstrates that true fine dining lies in intention and shared experience, not just exclusivity.
